Spicy Sweet Potato Fritters (Dragon Eggs)
Now I don't know much about football, but even I have learned that it is a mistake to just assume that the team with the most dragons will win. It seems logical, right? But seriously, it is way more complicated than that! You really want to take into account the opponent’s mystical defenses and definitely don’t underestimate their wizard’s ability to cast Interception…
Fantasy Football players as well as those reality-based fans will enjoy these sweet and spicy snacks while they debate strategy.

Ingredients
Ingredients
5 Medium Sweet Potatoes
3 Jalapenos
3 Cloves Garlic
Cornmeal (2 Tbs for mix and about 2 cups for coating)
Monterey Jack Cheese (or a vegan version thereof)
2 Tbs Brown Sugar
1 tsp Cumin
1 tsp Paprika
1 Tbs Salt
Few Dashes Tabasco
Oil for Frying
Sour Cream (optional)
Tools
Mixing Bowl
Measuring Cups/Spoons
Saucepan
Wooden Slotted Spoon (or similar safe tool to remove fritters from oil)
Cutting Board
Knife
Mix
- Bake sweet potatoes at 375oF for 40 minutes, until they can be pierced easily by a fork
- Remove from oven and set aside to cool
- Dice jalapenos
- Mince Garlic
- Slice cheese into 1/2" cubes
- Peel potatoes and mash in mixing bowl
- Add cumin, salt, brown sugar, paprika, and 2 Tbs cornmeal
- Mix well
Roll
- Enough sweet potato mix to make a 1" ball
- Press cube of cheese in center of the ball and cover completely
- Roll in cornmeal
- Shape into an egg
Fry and Serve
- Heat oil
- Really carefully add fritters to oil
- Fry until golden brown
- Super carefully remove and place on paper towels
Makes 18 - 20 fritters
