Macadamia Nut "Cream Cheese" (raw)

Macadamia nuts are used to substitute for creams in a number of raw food recipes, so they are clearly the go-to nut for a cream cheese stand in. 

This recipe is of mid-level complexity.  There are some that use only Macadamia nuts with water while others blend together different nuts and seasoning.  This seemed like a good, basic place to start and results in a cheese that can be used in a million different ways.  Can't wait to start using this in some new recipes as soon as possible!

Ingredients
  • 2 cups Macadamia Nuts
  • 2 1/2 cups filtered water
  • 2 Tbs coconut oil
  • 3 probiotic capsules
Materials/Tools
  • Cheese cloth or nut milk bag
  • Strainer
  • Really good food processor or blender
  • Mixing bowl
  • Measuring cup
  • Spatula
Directions
  • Place nuts, coconut oil and 2 cups of water in the blender or food processor
  • Blend until super-creamy (took a few minutes in a Vita-Mix)
  • Open probiotic capsules, dissolve in 1/2 cup of warm water
  • Pour water/probitics into nuts and stir
  • Pour mixture into nut milk bag
  • Twist the top of the bag and place into strainer
  • Place bowls/random dishes on top to press down cheese
  • Allow to sit in a warm, dry location for 24 hours
  • Remove from bag and place in fridge until chilled
  • Serve!
