Vegetable Ragda Cutlet
Ingredients required for curry(ragda) preparation:
Boiled chick peas 500g
1 onion
2 tomatoes
tamarind chutney as per taste
chat masala or dry mango powder
coriander powder
red chilli powder
salt
Ingredients required for patties preparation:
2 large potatoes boiled and mashed
2 bread slices crumbled
coriander powder
garam masala powder
red chilli powder
salt
Ingredients required for garnishing:
Finely sliced onions
coriander
yoghurt
yellow sev
coriander chutney
Method of Preparation:
Ragda preparation:
Smash half of the boiled chick peas and keep aside.Take a pan and few tablespoons of oil. Add sliced onions and fry for few minutes.Then add sliced tomatoes and allow to cook for few minutes. Now add smashed chick peas. Along with it add remaining peas. Add little water to attain a gravy consistency.Now its time to add all spice powders coriander,redchilli,chat masala,salt.Mix properly and allow to cook for few minutes till all spices blend properly with chick peas.
patties preparation:
Pressure cook the potatoes and smash them. Add bread crumbles,coriander powder,garam masala ,red chilli powder,salt and mix properly . Make round shape patties out of it. place patties in the pan and add few drops of oil around them and cook on both sides until they turn slightly brown color.
Method of garnishing:
place the patties on serving plate. Add prepared ragda on top of it. Then top it with onions, tamarind chutney ,yoghurt and coriander. serve hot.
