Scrumptious Pot Roast

Simple scrumptious slow-cooked pot roast done in your crock pot or other slow cooker. Nothing fancy, no previous cooking experience required and very little time to prepare. I braised the meat first, but you can even skip that step if you are really rushed for time and it will still be delicious!

Gather Your Goods

You will need

hardware:
crockpot/slow cooker
knife
cutting board

software:
1 hunk of meat -- your choice, about three pounds for 4-6 hungry people
(I have used turkey breast, pork tenderloin, and various on-sale beef roasts)
1-2 lg onions
3-5 med carrots
3-5 stalks celery
12 baby red/yellow potatoes or 4 lg red/yellow potatoes (you can use russets, but I find I prefer the texture of red or yellow in stews).
your favorite spice (mine is cumin today)
some AP flour for the braising (this also thickens the sauce/gravy)
salt and pepper to rub meat and to season gravy

Season and Flour-coat the Meat

rub salt, pepper and spices on your meat, then roll it in all-purpose flour to coat completely

Sear the Meat

put olive oil in a skillet and brown the meat on all sides to form a nice crust

Put Mirepoix in Crockpot

put your onions, celery and carrots in crock pot and turn on to low (for 8 hours or high for 5-6 hours)

Place Seasoned and Browned Meat in Pot

Rest the meat on top of the mirepoix

Deglaze Pan Drippings and Pour Over Meat

Add a cup of water or stock to the skillet and scrape all the crusty bits off the pan. add a little flour if you like thick gravy. pour this over the meat in the slow cooker.

Add Potatoes and Cover

Add baby potatoes or quartered medium potatoes, cover and set for 7-8 hours on low or 4-5 hours on high. Walk away.

Open and Serve!

Open the pot and smell the goodness! Serve up a heaping helping. Yum.
