Pierogie Lasagna

alternative to pierogies and lasagna!

What You Will Need....

1. Pasta ( does not need to be lasagna noodles) I usually grab whatever is convenient.
2. Potatoes ( red skin, Idaho, etc.) The choice is yours.
3. Cheese ( I prefer to shred my own. 1 pound)
4. Common ingredients for making mashed potatoes. .. Milk and butter or chicken broth and butter ( my choice, because of my kids)

Prepare Your Ingredients.

The first step is making mashed potatoes.
Peel, rinse & cut your choice of potatoes.
Place in a large pot with just enough water to cover potatoes, and bring to a boil. until a fork can stab the potatoes and come out clean. potatoes must be soft to mash. Once finished, drain the potatoes.

Add potatoes, butter and either broth or milk in the same pot the potatoes were cooked in, and MASH. This is fun for the kids to do.
( Today I added chopped onions and green peppers)

Noodles and Cheese.

Now that your potatoes are mashed, boil your choice noodles.
Now is the time to shred your cheese.
When noodles are done, strain and drain.

Begin Layering!

In a greased 9 x 13 pan, or two, begin to layer ingredients.
1. noodles,
2.mashed potatoes,
3. shredded cheese
and REPEAT! until out of room or product.
Heat your oven to 425°F

Now that you have layered all ingredients,
place in hot oven for 15 minutes!

Remove from oven after complete.
Cut, scoop and enjoy!
