Ground Beef Curry

I made up this recipe for ground beef curry a couple months ago - I wanted a really simple one pot meal one night when I was exhausted. This is a simple, quick and low maintenance dish that's great when you're down to the last of your groceries. You can eat it over rice, by itself, in a pita, or even on bread!

If you want to get fancy, serve ground beef curry with my pickled vegetables and cilantro on top! It makes it amazing.

Ingredients:

  • 1 pound ground beef
  • 1 onion
  • 2 potatoes
  • 1 cup+ frozen peas
  • 1 clove garlic
  • 1 inch piece of fresh ginger
  • 1 14.5 oz can beef stock
  • 2 T tomato paste
  • 2-3 T garam masala (I normally just keep adding until it's tasty!)
  • 1/2 T chili powder
  • 1/2 T cumin
  • couple pinches cumin seeds (optional)
  • salt to taste
You can leave things like the ginger or cumin seeds out if you don't have them - they are optional but make it taste perfect! You can also substitute frozen hash browns for the regular potatoes if you want it done quicker - I did that the first time and it tasted great! Just make sure to included either a potato in the beef mixture of serve it over something starchy. Otherwise it can be a little liquid-y.

Prep Work

Mince the garlic and ginger. Cut the onion as big as you like.

Dice the potato pretty finely - I cut mine no larger than 1/2 inch cubes. If you cut it larger it will take much longer to cook. :)

Cooking

Add the ground beef, onions, garlic and ginger to a large skillet. Cook over medium heat until the ground beef is cooked through and the onions are soft. Drain off as much excess fat as you can.

Once the fat is drained, add in your spices and tomato paste. Stir around until well mixed and fragrant.

Then add in the potatoes and mix again.

Simmering

Pour in the beef stock and stir everything together. Cover (I leave the lid cracked a little) and simmer for at least 30 minutes, stirring occasionally. It's done as soon as the potatoes are soft but not falling apart. 

After it's simmered for 10-15 minutes, start checking seasonings. I normally add more garam masala, chili powder, or tomato paste. :)

Serve!
