Fava Bean Schnitzels (broad Bean)

This recipie was invented by my husband who was trying to deal with an overabundance of broad beans.
Very yummy, can be eaten on their own or used as vegeburger patties.

Time required: 30min
Ingredients
1 cup of shelled and shucked broad beans (also known as fava beans)
1 cup peas (frozen is fine)
1 cup cooked rice (leftover from the night before is perfect)
about 1 cup breadcrumbs (finely crumbed)
2 good pinches of salt
1 teaspoon cumin (can be ommitted)
oil for frying (canola preferably or another mild tasting oil)
water for boiling

Equiptment needed
1 pot
1 frying pan
blender or food processor or mortar and pestle
mixing bowl
spatula
mixing spoon
plates, and bowls
kitchen paper (if you want to soak up some of the oil after cooking)

Cook the Beans

Put the peas and beans in a pot.
Simmer for about 10 minutes until soft.

Blend the Green Things

Drain the peas and beans then put then in the blender (or mortar and pestle).
blend.
Leaving a few lumps (or whole peas) is fine, it adds texture.

Mix Ingredients

In the large mixing bowl add:
Blended green stuff
1 cup cooked rice
1/2 cup breadcrumbs
pinch of salt

mix together

In a smaller bowl add
rest of breadcrumbs
pinch of salt
1 teaspoon cumin (can leave out cumin if you want or replace with a little dried stock or paprika)

Mix together

Form Patties

Take a tablespoon of the green mixture and roll it between your hands into a ball.
Then squish into a patty shape between your palms.

Coat in breadcrumbs.

Repeat.
should make approx 12 patties.

Fry

Shallow fry in canola oil.

Poar a reasnoble amount of oil in the frying pan (so it will reach about hlf way up the patties sides.
Heat oil until hot.
Then put patties in the oil (patties should sizzle immediately when going into the pan, if they do not oil is not hot enough and you need to wait a bit longer).

When patties get golden brown (should take a couple of minutes) flip them over and cook the other side.

When patties are golden on both sides take them out of the pan and let drain on some kitchen paper ( if you want to remove some of the oil (otherwise dont use the paper)).

Done.

They are really nice to eat with some sour cream and sweet chili sauce, or as a vegeburger/ sandwich filling.
