Zucchini Tortellini Soup
This is an easy, healthy, and delicious soup that only takes minutes to cook.
Ingredients
- 2 tablespoons of olive oil
- 2 cloves of garlic
- 1 large onion
- 1 can of diced tomatoes with basil, oregano and garlic
- 1 32 oz. carton of chicken broth
- 2 medium zucchini
- 1/2 teaspoon of rosemary
- 1/2 teaspoon of thyme
- 1/2 teaspoon of oregano
- 1 teaspoon of basil
- 3/4 teaspoon salt
- 1/8 teaspoon of red pepper flakes
- 1/8 teaspoon of black pepper
- 10 oz. refrigerated cheese tortellini
Cook
Chop onion. In a pot, brown onion and garlic in oil. Set aside. Halve zucchini and cut into thin slices. Add broth and tomatoes to onions and garlic and bring to a boil. Add spices. When boiling, add zucchini and tortellini. Cook in soup as package directs.
