Today we’re making incredibly tasty and delicate zucchini nests — a perfect idea for lunch or dinner. It’s an easy, veggie-based dish that’s both healthy and satisfying!

Supplies

Ingredients:
• 3 zucchinis
• 3 carrots
• 3 potatoes
Filling:
• mushrooms
• onion
• salt and pepper
• sour cream or kefir
• shredded cheese




Grate the vegetables on a Korean-style grater, add salt, and let sit for 5 minutes. Then squeeze out excess moisture, shape the mixture into nests on a baking tray, and bake for 30 minutes at 170°C.





Filling:
Sauté mushrooms with onions, add sour cream or kefir. Place the filling into the nests, sprinkle with cheese, and bake for 2 more minutes.
