Zucchini Chocolate Bread

This bread comes complete with a chocolate fix and a side of vegetables. This easy recipe results in a moist bread in which you will enjoy every bite.

Supplies

mixing bowl

spoon

grater

bread pan

Ingredients

1 cup sugar

2 eggs

1/2 cup vegetable oil

1 1/2 cups grated zucchini

1 teaspoon vanilla extract

1 1/2 cups flour

1/4 cup unsweetened cocoa powder

1 teaspoon salt

1/2 teaspoon baking soda

1/2 teaspoon baking powder

1 teaspoon ground cinnamon

1/2 cup dark chocolate chips

Preheat Oven. Combine Wet Ingredients

Preheat oven to 350 degrees.

In a bowl combine the sugar, eggs, and oil. Stir until well blended.

Stir in the zucchini and vanilla.

Add Dry Ingredients

Add flour, cocoa, salt, baking soda, baking powder, and cinnamon. Stir just until blended.

Add Chocolate

Stir in the chocolate chips.

Bake

Lightly grease a bread loaf pan. Spread the batter into the loaf pan.

Bake the loaf for 1 hour, or until a toothpick comes out clean.

Let the loaf cool in the pan for 20 minutes. Turn them onto a wire rack to finish cooling.
