Zippy Beans and Rice



THIS IS ONE OF MY GRANDMAS RECIPES SHE MAKES
1 can (15 ounces) black beans, rinsed and drained
1 can (10 ounces) dices tomatoes and green chilies, undrained
1 cup of frozen corn
1 half teaspoon of cayenne pepper
3/4 cup of water
1 medium jalapeno pepper, seeded and chopped
1 teaspoon salt (optional)
1 cup of uncooked instant white or brown rice
1 green onion, sliced
1/4 teaspoon of cumin (optional)
DIRECTIONS: In a skillet combine beans, tomatoes, corn, water, jalapeno,and salt. bring to boil and then stir in rice. cover and remove from heat let stand for 5 minutes
