Zesty Hot Salsa

This is a good receipt for a very colorful full of flavor hot salsa. It uses many easily obtainable fresh items from the garden to make.

Preparing the Tomato Base

For this salsa you want to have about 20 whole tomatoes peeled and cored. 1/4 of them should be run through a sauce master with a salsa screen, and the other 3/4 should be diced into cubes all of this should be added to a 12 quart sauce pan.

Add about 4 cups of chopped bell peppers. (we use colored to add more of a visual appear)

2 cups of cooked corn

2 cups of diced jalapenos

2 cups of onion (mixed red, white and yellow)

1 cup of lime juice

3 tablespoons of cilantro

Mix this and simmer for 30 minutes

Pour this material into quart jars with 1/2 teaspoon of citric acid.

Can in a water bath canner for the proper amount of time for your area.

In Ohio this is for 20 minutes.
