Yogurt Fruit Cake From Scratch
Today, we are making a yogurt fruit cake! This is very simple to make and you can easily find these ingredients near you. We will also be making homemade yogurt in the process to add some extra flavor to it.
Supplies
- 500ml Milk
- Blueberry
- Mango
- Watermelon
- Celery Stick (So you can hold it)
- 2 tablespoons of vanilla or plain yogurt
Boil the Milk
First, we need to make the yogurt. Start off with boiling the milk. You know when to stop the stove heat when it starts boiling. Make sure to have caution around the heated milk as it will be very hot.
Cool the Milk
Now you need to cool the milk to lukewarm. To make it quicker you can put the milk in some cold ice water. This will speed up the cooling process. Make sure not to make it too cold which kills off the healthy bacteria that helps ferment the yogurt, nor too hot or it will become sour.
Add Yogurt
Now you need to add two tablespoons of yogurt from a previous batch to the milk. Make sure to stir it well to get the yogurt properly mixed in. After that, cover the milk container with a kitchen towel to keep it warm, and put it in a heated space (like your oven with a light on) for about 4 to 5 hours.
Put the Yogurt in the Fridge
Now that we finished making the yogurt, we need to put it in the fridge. We put it in the fridge so that it can cool down and become cold like how yogurt is. Now you're done with your yogurt! If you have any leftover yogurt, you can add some sugar to it to make it sweet and crunchy. (Fun fact: Did you know that yogurt is a natural probiotic?)
Prepare the Fruits
Now we can start making the cake. Get bowls for each fruit. First, mash the watermelon, but make sure not to overdo it or else it will become all watery. Then, blend the blueberries together in a blender. Also, cut the mango and then mash it with a spoon. Cut a celery stalk into sticks that are about the size of the bowl you are making the fruit cake in. Finally, take some yogurt and add honey to it for some sweetness.
Make the Fruit Cake
Time to assemble everything! You cant put it in any order you want but this is how I did it. First, I put the blueberry as the bottom layer. Then the mashed watermelon. After that, I put the yogurt in which seeped down, so make sure to add a bit extra. Then add the cut mango. Finally, put a celery stick in the middle as a finishing touch. Now freeze it overnight. The next day, take it out and put it in a bowl of warm water and it should come out. And now you're done! It's the perfect healthy and homemade treat to enjoy on a nice summer day or whenever you want.
