Yellow Squash With Yellow Rice

Ingredients
2 lbs yellow summer squash - about 4 small squashes
1 cup white rice
2 tablespoons olive oil
1 teaspoon garlic powder
1 teaspoon turmeric
2 teaspoons salt
1 teaspoon pepper
1 bay leaf
Any other seasoning you would like on the squash
Preheat Oven
Preheat your oven to 400 degrees Fahrenheit.
Prepare Rice
Rinse one cup of rice with water in a mesh sieve until the water coming out from under the sieve is clear, about 1 minute.
Cook Rice
Melt one tablespoon of butter in the pan you are going to cook the rice in. Pour the rice into the pan, then coat the top of it with the turmeric, one teaspoon of salt, and place one bay leaf on top.
Next, please follow the directions on the bag of rice YOU are using to determine how much boiling water to use with one cup of rice, how long to cook it for, and how long to let it steam. Every bag of rice is different and can vary in the amount of water used and the length cooked.
Prepare Squash
Once you have started cooking the rice, start preparing the squash.
First, rinse the squash to make sure the outside is clean. Then, cut the squash into about 1/4-inch thick round slices. Toss the slices in a bowl with the garlic powder, one teaspoon of salt, pepper, olive oil, and whatever other seasonings you would like.
Cook Squash
Spread all the squash slices flat, on one layer, and evenly onto two baking sheets covered in parchment paper. If desired, sprinkle extra seasoning on the slices that may have gotten less seasoning from earlier.
Place the baking sheets into the oven and leave them for about 15 minutes, or until tender.
Fluff Rice
Once the rice finishes, take the lid off and use a fork to fluff the rice around a bit.
Take Out Squash and Serve
The squash should be finished around the same time as the rice. After 15 minutes in the oven, take the squash out of the oven and immediately serve with rice.
