Witches Snot Candy Drops

I set out to make a matcha candy and this is what I made. Chow down!

These candy drops are naturally colored and flavored with jasmine green tea, lemon, and matcha. Matcha naturally colors these drops a green color, that is very much like the snot of a witch. The texture is taffy~like.

Supplies

Ingredients:

  • 1 cup water
  • 2 bags of jasmine green tea
  • 2 teaspoons matcha powder (more for dusting)
  • 1 cup sugar
  • 1/2 teaspoon cream of tartar.
  • 1/2 teaspoon lemon extract
  • Pinch of citric acid (optional)
  • Powdered sugar for dusting

Boil Water for Tea

Bring one cup of water to a boil. When your water is boiling take it off heat.

Steep the Jasmine Green Tea

Now put in 2 tea bags of jasmine green tea. Let the tea steep for 2 minutes. Take out the tea bags and discard.

Cool the Jasmine Green Tea

Now put your jasmine tea into the fridge until cool, about 20 minutes. Pour the jasmine green tea into a liquid measuring cup until you have 1/2 a cup of tea. The tea left is too strong for drinking, but for no waste you can freeze the tea into ice cubes and prepare a batch of weaker jasmine green tea and add the jasmine tea ice for a delicious iced jasmine green tea.

Making the Snot Mixture

Pour your 1/2 cup of jasmine tea, 1 cup sugar, 1/2 teaspoon cream of tartar, and 2 teaspoons matcha powder into a medium saucepan and stir. Now heat the witch snot mixture over medium low heat until boiling then bring down to low. Cook on low and medium low to keep it boiling until soft crack stage*. Stir constantly with a WOODEN spoon or the mixture will bubble over. Remove your pan from the heat immediately when mixture is hard crack stage.

*Soft crack stage is 270F~290F for those who have candy thermometers. DonĀ“t worry if you do not have a candy thermometer there is another way that I use. Take a spoonful of the mixture and drop in water with lots of ice. If the mixture becomes firm but the threads are pliable in the ice water then it is ready. Preparing Snot

Pour your mixture onto a silicone mat or parchment paper. Pour in your 1/2 teaspoon of lemon extract on top and fold it in with a buttered or oiled spatula. Add a small pinch of citric acid (optional). Wait until the mixture is warm but not so hot it burns you fingers when you pick it up.

Making Snot

When it is a fine temperature start pulling. Butter you hands or use neutral oil, I would use sunflower oil. Pull the semi soft mixture then fold it over itself, then fold it over itself again. Keep pulling, folding, and folding until the mixture is shiny and a lighter green.

Finish the Snot

Pull off chunks of the snot, roll into balls, then roll the balls in powdered sugar, and then roll the balls in matcha powder. Chow down immediately or wrap them with parchment paper squares into candies and store them in a jar or airtight container. Delicious!
