Wicked Easy Bean Salad
This salad is really quick, really easy and really really yummy.
You will need:
1 can Red Kidney Beans
1 can Chick Peas (aka Garbanzo beans)
Tomatoes
Italian Dressing ( I like Ken's Light Italian. You want a dressing with a bit of spice, no Hidden Valley crap)
Optional:
Cucumbers (my favorite, but I haven't successfully grown any this year)
Feta cheese or mozzarella cheese.
Green Peppers (because I did successfully grow them this year)
also good:
Celery, baked tofu, Tuna Fish, green beans....... whatever you want.
Drain the beans. (I don't rinse them)
Chop up the tomatoes and peppers.
Toss it all together in the big bowl.
Add Italian dressing, ( about 1/4 C) and toss it together.
Eat and enjoy. You can put it in the fridge, and the beans absorb some of the dressing. This is a quick and easy meal, or bring it to a pot luck/ BBQ. It's also really good to take on a picnic. With a little Italian Bread........yum.............
