Whole30 Olive Garden Zuppa Toscana
Zuppa Toscana soup is a Tuscan soup that is rich and creamy filled with kale, potatoes, onions, and sausage. However, this recipe as a Whole30 twist. Whole30 is a 30-day is an elimination-style eating plan that removes all soy, dairy, grain, alcohol, legumes, and added sugars. Just as a tip make sure to read the labels! Most premade sausages and chicken stock contain some form of sugar.

Gather Up the Ingredients and Tools
Ingredients
- 1 pound of Italian sausage
- 3 oz of ham
- 1/2 teaspoons of red pepper flakes
- 4 medium yellow potatoes
- 1 medium white or yellow onion diced
- 2 tablespoons garlic minced, about 4 cloves
- 4 cups chicken broth (or stock)
- 1/2 bunch kale stems
- 1 can coconut milk
- Salt and pepper to taste

Prep the Ingredients
Prep the ingredients by cutting up the potatoes, defrosting the Italian sausage, and measuring out the spices. A time-saving tip is to buy the kale pre-chopped.
Brown Up the Sausage and Ham
Add the 1 pound of Italian sausage into Large pot. After the sausage is browned, add ham.
This should take about 5 minutes with the burner on medium to high heat.
Add the Onions and Garlic
Once the sausage is brown, and ham is cooked, add the onions and garlic. Let the onions and garlic sweat and wait until the onions are translucent.
