White Chocolate and Cranberry Cookies

Winter break is coming to an end and every kid is mourning the return to grim, grey halls of school; so why not brighten the day with some sweets?

What You Need...

Ingredients:


- 1 1/2 cup of All-Purpose Flour

- 1 tsp. Baking soda

- 2 Sticks of Butter

- 1 tsp. of Cinnamon

-1 1/4 cup of Cranberries

- 2  Eggs

- 3 cups of Oats

- (1) 6oz pack of  Instant Pudding (Preferably JELL-O brand)

- 1/2 cup of White sugar

- 3/4 cup of Light brown sugar **(You can use dark, but I selected light since so they wouldn't be to sweet with the white chocolate.)**

-  6 oz of white chocolate chips

- 1 tsp. Vanilla extract


Cookware:

- A Mixer

- A flour sifter

- A Measuring cup

- *Measuring spoons

- *Rubber spatula

-  *Metal spatula

-  Cookie sheet

- Parchment/wax paper or cooking spray (Something like Baker's Joy)


** I know I have salt included in the picture, but not the ingredient list. I forgot to add it, but everyone said the cookies were awesome nonetheless.**

Before We Begin...

SAFETY FIRST!

It doesn't hurt to be clean, right? So grab some disinfectant wipes and clean those counters and tables!
Also, be sure to remove any flammable items away from your stove. You don't want to start a fire (which I almost did) and ruin the fun.

Preparations:

-Take your butter and leave it out to soften. This takes at least 30 minutes, so if you're feeling impatient, you could microwave it for about :15.

-Pre-heat your oven to 350 F


Now onto the real fun!

Begin!

1.) Put the softened butter and sugar into the mixer bowl and beat on the lowest setting for 2 minutes. It should start to get a creamy texture, like frosting. **See the right-most picture in the bottom row.**

**The mix tends to clump together and stick to the beater, so use a rubber spatula or spoon to push the mix back into the bowl.**

2.) Crack your eggs, then add the baking soda, vanilla, cinnamon, and 2 tablespoons of the instant pudding mix.
      Combine with the butter and sugar mixture and beat for 5 minutes, then stop your mixer.


*You should now sift your flour if you so desire. **If you don't have a sifter, you can use a mesh strainer and rake a spoon through it.** 

3.) Add flour.

3.) Add the oats; then mix on a medium setting. Slowly pour in the chocolate and cranberries as it stirs.

6.) Line a cookie sheet with parchment paper or spray with cooking spray, then add teaspoon sized balls of dough.

7.) Bake for 12-15 minutes.
