Warm Quinoa Avocado Citrus Salad

List of Ingredients:

  • 1 cup quinoa
  • 2 cups water
  • 2 Haas avocados
  • 1 Ruby Red Grapefruit (or citrus of your choice, such as Blood Orange or Cara Cara Orange)
  • Pine Nuts (or roasted sunflower seeds, or roasted slivered almonds - choices, choices!)
  • Green onions, sliced
  • Annie's Naturals Organic Asian Sesame dressing

Cook Your Quinoa (pronounced Keen-wah, in Case You Care)

Add 1 cup of quinoa to 2 cups water in a pan, bring to a boil. Then reduce to simmer, cover, cook for 15 minutes. Turn off heat, take off cover and let steam evaporate.

Prepare your citrus. Separate ruby grapefruit into sections and peel those sections to make them look purty. The easiest way to do this is to slice off the tough strip of membrane at the flat edge, which frees the sides to peel right off. Chop your pretty grapefruit into bite-size pieces.

Peel your avocados and chop them into bite-size pieces.

Slice your green onions.

Dish the warm quinoa into bowls, drizzle each serving with a tablespoon of Asian dressing, and top with everything you just chopped up in the most artistic way you can muster. Sprinkle on your nuts or seeds of choice and chow down!

Easy-cheesy, and fairly economical to boot!
