Walnutbuns With Sourdough
I've alwayes loved baking bread. But i wanted to know, how to make a bread with a great taste, and light crumb.
I went to the best baker in Denmark, and i learned how to make these lovely buns..,try them at home :) They are great.

Making the Sourdough
Mix 1cup of whole wheat flour with one cup of white flour. Add water till it gets into a thick paste. Let it stay in a dark place for 3-4 days, stir it every day. When the smell is a bit sour and bubbles apears, its ready to use.
The sourdough gives the buns a lovely taste, and more airbubles in the middle of the bread, because of the enzymes and bacterias.
When you have used the right amount of sourdough to the dough, you mix some more whole wheat flour/white flour, 50/50, and feed it to the remains of your sourdough. Thats the way you keep your sourdough alive till the next time you bake. Feed your sourdough every 2-3 day, and stir it every day.

Things to Use
5,5 dl of water
10 grams of yeast
1 dl sourdough
125 grams whole wheat flour
650 grams of flour
20 grams of salt
100 grams of walnuts
Kitchen mixer
Oil

Making the Dough
Mix all the things together in a big bowl, i use a kitchen mixer to mix my dough. I mix it, till the gluten gets out of the flour, and the dough gets tough. Add the nuts in the end. Let the dough rest cold, till next day.
Finish the Buns
Take the dough out of the cold place, let it get room temprature. Put oil on the table and take the dough out of the bowl very carefully so the air dosn't get out of the dough. Put oil on the knife, and cut the dough into buns. Put them in the oven for about 15-18 min, 250 celcius. Cool of, butter them, and ready to eat..
