Ever dream about those waffles Anne-Marie's adoptive parents make for her in All Dogs Go To Heaven?

These are those waffles.

Except they are round.

Measure Out Your Stuff

If you consider yourself a really awful baker who cringes at the sight of a whisk, I have life-changing advice for you:

Measure out all the ingredients in cute little bowls before combining them.

Even if it's only a teaspoon of salt, give it its own bowl. Make it feel special and important, because it IS special and important. Just don't think of the sink full of cute little bowls that will be the end result. Think of the crisp, mouth-watering waffles of perfection.

Equipment:

  • Waffle iron (this one is kind of important, so it's at the top)
  • Hand mixer or stand mixer (unless you got buff wrists and you wanna whip/mix/whisk by hand)
  • Whisk
  • 1 large bowl
  • 1 medium bowl
  • A bunch of cute little bowls (optional, but recommended. They will be mentioned frequently)
  • Spatula or wooden spoon
  • Ladle (or other type of spoon-shaped, waffle-batter spooning type device)
  • Vegetable Oil
  • Optional: brush to spread oil on iron

Ingredients:

  • 1/2 cup (1 Stick) unsalted butter, melted (do this first so it's not super hot when combining everything)
  • 3 large eggs (separate the yolks and whites, and seriously, large are best. Use 4 if they are on the small size)
  • 1 1/2 cups whole milk
  • 2 teaspoons vanilla extract
  • 1 3/4 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 4 Tablespoons sugar

First Combo

(For this step, get the flour, baking powder, and salt ready!)

In a large bowl (cause this is going to be your final form bowl in which all things are born) combine the dry stuff and whisk together . Dry stuff being:

  • flour
  • baking powder
  • salt

Optional: Narrate what you are doing in your best cook-show host voice

(oh and you should turn your waffle iron on at this point, so it gets nice and hot. Mine is on high!)

Combine More Stuff in Another Bowl!

(For this step, get the butter, milk, egg yolks, and vanilla ready!)

We are going to need the medium, bowl-type bowl to combine the next ingredients.

"So we are just going to toss 'em all in and mix 'em up, right?"

Naw, do it this fancy way, bae!

Make sure the butter has had some time to cool off from it's microwave beach party, or else it's going to scramble up your egg yolks. Put the butter in the bowl first, and then slowly, slowly, ever so slowly add the milk while constantly whisking. (BONUS ADVICE: Use the same whisk as before.)

If it's a little chunky, it's absolutely fine. Those are chunks of delicious butter.

Then toss in the egg yolks and vanilla unceremoniously, then whisk it some more. Set aside.

MAKE THE CLOUDS

(For this step, get the egg whites and sugar handy!)

This is the best part. Fluff them egg whites! Use either a stand mixer or a hand-mixer to go nuts on those egg whites. Put it on high and set that timer for 3 minutes.

When 3 minutes are up, take a break and check the fluff level. If it's steep-peak type level, turn that mixer back on, and sprinkling the sugar in with the clouds you've just created.

More Combining

(OK, now we bring everything together. You should have like a billion bowls of stuff and be slightly regretting your day at this point.)

For real though, you should have 3 bowls of stuff: Wet ingredients, dry ingredients, and a heavenly sweet poofy bowl of egg whites.

Add the wet ingredients to the dry ingredients. Don't over mix, for some reason.

Now.

Now is the moment you've been waiting for. Get out a spatula, or something just as delicate, and slide those fluffed up egg whites into the main bowl. Fold them into the mixture like you would fold a fitted sheet.

They will look like glorious glorious clouds.

Cook Them and Stuff

Depending on your relationship with your waffle iron, you might want to oil it up generously. I highly recommend NOT using waffle iron spray, as in my experience it smells and tastes nasty. Canola oil does a great job.

They usually will take about 6-8 minutes each, if you like them crispy. And trust me, you do.

Add things like:

Blueberries!

and whipped cream!

and even

SYRUP!
