Vitamin Salad
Beautiful salad, made from healthy raw and fresh veggies – Best Colorful Vitamin Mix Salad!
Beetroot is one of the ingradients that is not that much used RAW in salads, and I highly recomend it – it’s wonderful & healthy! Also, for this salad I decided to use sunflower seed, and you can try other similar ingreadients, like pumpkin seeds or walnuts.
INGREDIENTS (4 Servings):
- 300g cabbage
- 1 carrot
- 1 green or yellow pepper
- 200g cherry tomato
- 1 beetroot
- 50g arugula
- 1/2 lemon
- 1/2 tsp salt
- 3 tbsp vinegar
- 2 tbsp olive oil
- parsley
- pepper mix
- 50g sunflower seed (pealed)
CUT
Cut into small pieces all the ingredients required for the salad. Slice a cabbage, grate a carrot and a peeled beetroot. Place it in a big bowl. Add cherry tomatos cut on half, chopped green pepper and some arugula leaves.
SALAD DRESSING
Cover all the vegetables with some olive oil, vinegar, lemon, and season it with little salt and pepper. Mix it all well.
SERVING
Sprinkle the salad with some parsley and sunflower seed on top.
