Vika's Special Omelette-Pizza

Hello,

My name is Vika and I would like to share my recipe with all of you! My friends often come over specially for my omelette. They call it Vika's omelette as it's quite different from ones they are used to. They say that it looks like Pizza (that why I called it omelette-pizza). I use all fresh ingredients and herbs and also mix whatever meat i have at home ( if they prefer meaty one :-) )

Ingredients

Ingredients needed ( for one person):
2 Eggs

1/2 Small onion

5 or 6 Button mushrooms

1/3 Red sweet pepper/Paprika

Little bit of parsley

2 medium sized tomatoes

Little bit of coriander

Small garlic clove Salt and pepper

Wash and finely chop onion, parsley, mushrooms and paprika.

I usually cut mushrooms with egg cutter - it looks nice and neat and it's very fast/easy.

As for tomatoes, I make small cuts on their skin and pour hot water over it. I drain the water for 2-3 minutes. It's easy to peel the skin off when it softens. Then i grate it or you could just chop it very fine.

Making Mixture..

Start frying onions, parsley, sweet pepper and mushrooms. (add salt)

Beat two eggs and add the chopped tomatoes to it. (add salt)

When the onion, parsley, sweet pepper and mushrooms get golden/brown add it to your egg/tomato mixture and mix it well.

Frying Your Omelette..

Pour some butter or butter substitute on a frying pan and pour your omelette mixture on it. Fry for about 3 minutes and then put it under the grill (till the egg mixture solidifies).

Prepare the Topping..

For vegetarian omelette just chop some coriander and garlic. As for the non vegetarian one also chop some salami or chorizo sausage and fry it on a frying pan (without oil) - for 2-3 minutes.

The Omelette-Pizza Is Ready!

Sprinkle some garlic, black pepper and coriander on your omelet and it's done!

Add some fried sausage if you fancy some meat!
