Vietnamese Coconut Waffles

Vietnamese Coconut Waffles, isn't the typical morning waffle with syrup. It has a little something special unlike all the other morning waffles. The waffles are perfect for a light afternoon snack and it's easy to make.

Ingredients

  • 1 bag of rice flour
  • 1/4 of tapioca starch
  • 1/2 of Alsa baking powder
  • 1 cup of sugar
  • 1/2 bag of the coconut flakes
  • 3 eggs
  • 1 can of savoy coconut cream
  • 1 cup of water
  • 1 drop of pandan paste

Other

  • Waffle maker
  • Fork

This recipe makes about 20 waffles

Mix up all the ingredients except for the pandan paste and the coconut flakes. Mix the ingredients with your hands to get all the small lumps out. Adding the oil to the batter will help it not stick to the waffle maker.

After mixing up the batter, refrigerate for 24 hours. Make sure to cover up your batter with a lid.

After placing the batter in the refrigerator, mix it up again. Then, add in one drop of pandan paste. Mix it up. After, you finished mixing it up, it should be a light green. Then, add in one half of the bag of coconut flakes. Finally, mix it up again.

Now use a measuring cup to scoop the batter into the waffle maker. Do this two times. Then close the waffle maker. Now wait till the light goes green. After that open the waffle maker and carefully use a fork to get the waffle out.
