This meal is so quick and easy. I don't follow the chili box directions I actually only like their spices, I make everything else my way.

  • 2 cans of mushrooms drained (fresh is better)
  • 2 cans of drained beans kidney, pinto beans or a mixture or your favorites.

Toppings:

  • sour cream
  • shredded cheddar cheese

Start off browning the venison in a large pot. Olive oil is used when browning because there is no fat in the venison. I process all my own meat and never add any fat. Halfway through the browning process add the entire diced onion. Cook on high heat until the meat is completely browned. Once browned lower the heat down to medium and add in the tomatoes, mushrooms and drained beans. Stir together until even consistency. Next add in your chili seasoning. Again I like to use the spices in the Carroll Shelby's chilli kit, I don't use their recipe but I like their spices! Mix all together and cook for 10 minutes or so then remove form heat and you are done!

Yum!
