Venison Chili

There is something special about making a pot of chili in the fall. It reminds me of my childhood deer hunting camp sitting around the fire waiting for the fresh harvest to simmer. When we harvest an animal we want to prepare it in a way everyone can enjoy it. Venison chili is simple and how I introduced my wife to wild game. This recipe takes around 45 minutes to prep with a cook time of 45 minutes to one hour.

Supplies

Ingredients:

2# ground venison

ΒΌ # sliced mushrooms

1 medium red bell pepper

1 red onion

1 can green chilis

1 can fire roasted tomatoes

1 can garbanzo or kidney beans

1 tbsp cumin

1 tbsp paprika,

1 clove chopped garlic

4 tbsp crushed red pepper

1 tbsp black pepper

Salt to taste

Brown Meat

  1. Coat pot with olive oil
  2. Place meat in pan on med-high heat
  3. stir until all meat is brown and crumbles


Vegetable Prep and Cook

  1. Dice onion and green pepper.
  2. Slice mushrooms
  3. Add to pot
  4. cook on med heat until soft

Season

Season with:1 tbsp cumin

1 tbsp  paprika,

1 clove chopped garlic

4 tbsp  crushed red pepper

1 tbsp black pepper

Salt to taste

Once dry ingredients are in add in one cup of water and bring to a boil for 15-20 minutes.
