Vegetarian Stir Fry
Stir-fry is an amazing dish and can be made to fill you up and fulfill nutritional needs , especially if you leave out the meat. This meal could be made vegan depending on what noodles you choose. The main knowledge you will need to know is how to safely cut and clean vegetables. This dish has many ingredients that can be substituted which provides plenty of flexibility. I provide some substitutions but feel free to try your own.

Ingredients:
The ingredients are as follows:
- ½ pound of noodles(whatever your preference is) or rice.
- Vegetables that you enjoy(for my recipe I am using 2 cups of broccoli, ¼ red and yellow bell pepper, 6 oz of asparagus, 4 oz. of snow peas, and 3 green onions)
- Garlic(I used 2 cloves)
- 2 teaspoons of oil (your choice I am using olive oil some others include peanut oil, sunflower oil, and vegetable oil)
- Salt (optional for noodles)
- Pepper (optional for noodles)
The ingredients for the sauce are as follows:
- ¼ cup of soy sauce
- ¼ cup of water
- 2 teaspoons of sriracha (leave out if you don't like spicy food) alternative for less sugar would be harissa paste
- 2 tablespoons of ketchup
- 2 tablespoons of apple cider vinegar
- 1-2 tablespoons of brown sugar
Preparing the Vegetables and Garlic
- First before doing anything make sure to wash and clean off all of the vegetables you will be using.
- Once everything is washed begin by taking the bell peppers and dicing them up until they are in small pieces.
- Then, chop up the broccoli into small pieces. These broccoli florets do not need to be as small as the sliced up bell peppers.
- Following that, prepare the green onions. This involves slicing it into little pieces, separating the white part from the green part but keeping them both.
- Next, trim off the ends of the asparagus and keep the tops.
- Finally, take however much garlic you desire. For my recipe, I am using 2 cloves. Peel the garlic and dice it up.
Make the Sauce
The sauce should be brownish reddish and the scent should burn a little when sniffed
The steps for making the sauce are as follows:
- Add the water, soy sauce, brown sugar, ketchup, vinegar, and optional sriracha into a bowl.
- Mix well for about 30 seconds to 1 minute.
Cook the Vegetables
The vegetables should look like this, the garlic scent should be going away as well as everything starting to brown.
The steps to cook the vegetables are as follows:
- Start boiling a pot of water
- Get out a large skillet to heat the vegetables.
- Add 2 teaspoons of oil to the skillet over high heat.
- Add the garlic and the white part of the green onions.
- After 45 seconds add the chopped up yellow and orange bell peppers
- After 1 minute, add the broccoli, asparagus, and snow peas.
- This should cook for around 3-5 more minutes.
- Feel free to add salt and pepper if desired.
- After the allotted time turn the heat to low so the vegetables stay warm until the noodles are ready.
Boiling the Noodles
- The pot of water should be boiling now, so go ahead and drop the noodles or rice. The cooking time depends on what kind of noodles or rice you use and for me it took 10 minutes.
- Once the noodles are fully cooked, strain the noodles to get rid of the water.
- After around 10 minutes of cooking the noodles and straining the water you should have the noodles and mixed vegetables cooked and ready to be combined
Finish the Dish Off
This is what the meal should look like when it is finished with the noodles, vegetables, and sauce mixed into a serving bowl.
The steps to finish the dish are as follows:
- Next combine the cooked vegetables and the noodles into one big bowl
- Add the sauce
- Mix everything together
- Add salt and pepper if desired
- Finally, add the green onion for garnish
The Stir fry is now finished and ready to be enjoyed!
