Vegetarian Plantain Sandwich

Vegetarian Plantain Sandwich
This recipe is for the plantain sandwich with a side salad making it a perfect meal.
You can easily modify this recipe by either changing/adding anything to your salad (I like to add avocados) or to the sandwich itself. The possibilities are endless!
Yields about 4 servings

Supplies
Sandwich:
- Ciabatta Bread (I used the one foot long from Price Chopper)
- Oaxaca Cheese
- Shallot
- Roasted pepper (this time I used Poblano)
- Black plantain (the riper, the sweeter the plantain will be)
Salad:
- Romaine lettuce
- Radishes
- Orange ( I used Navel)
- 1/2 cup red wine vinegar
- 1 Tbsp sugar
Both:
- Salt
- pepper
- olive oil
Roast Peppers
1. Peppers
- cut peppers
- Spread on a prepared baking sheet
- Add salt and pepper to taste
- Roast for 15-20 minutes at 450 F (or to the desired doneness)
- Alternatively, you can buy peppers already roasted! :)
2. Shallot
- Combine 1/2 cup red wine vinegar and 1 Tbs sugar
- peel and thinly slice the shallot
- add shallot to vinegar mixture and allow to marinate while you prepare the other ingredients (about 10 minutes).
Prepare Plantains
- Plantains
- Cut plantain into four slices (I used two plantains here)
- Add salt and pepper to taste
- place plantains on cast iron skillet with olive oil
- pan-fry until brown/somewhat black, as seen on the picture, on both sides(about 3 minutes per side).
- remove plantains from the pan and set aside
2. Shallots
- After removing the plantains, use a fork to add marinated shallots to the pan saving the juice.
- Add salt and pepper to taste.
- cook for 3 minutes and remove from the pan.
Prepare Salad
- Combine chopped lettuce, orange, and radishes as shown.
- Add reserved juice of the shallot marinade.
- Drizzle with olive oil
Assemble Sandwich
Slice the bread and add cheese, plantains, shallots, and peppers.
- Cut the sandwich in half (or it will not fit in the pan)
- place on the skillet (pressing down with a spatula or another pan)
- Flip and cook on the other side to desired crispiness. (about 2 minutes per side).
- Cut sandwich in half once more (yielding 4 servings total)
Serve and Enjoy!
- Place1/4 of the sandwich and 1 cup of the salad on a plate.
*Strawberry Jarritos is a great drink to complete this meal.
