Vegetarian Lasagna
I love lasagna. I would like to share my recipe with you. Please remember that I cook for alot of people. You can scale down the recipe for yourself or just freeze a batch of it. Heck have a party! This recipe will feed fifteen people with left overs.
Ingredients
4 boxes of lasagna noodles
4 1 lb. packages of firm tofu
4 1 lb. packages of soft tofu
1 box or large bag of spinach leaves washed, dried and julienne
olive oil
juice from two lemons or 1/3 cup lemon juice
granulated garlic
salt and pepper to taste
1/2 cup of soy milk
and some homemade lasagna sauce https://www.instructables.com/id/Spaghetti-Lasagna-Sauce/
for the veggie wash you will also need some baking soda
a food processor is great but if you don't have one a sieve or potato masher will work as well

for the veggie wash you will also need some baking soda
a food processor is great but if you don't have one a sieve or potato masher will work as well
"cheese" Filling
Drain the tofu. Don't discard it. I put it with my water that I use for my garden. Chop it up and set aside.
In the food processor you are going to add:
tofu
lemon juice
milk
granulated garlic
salt and pepper
I did it in little batches. Add more milk or lemon juice if you need to. If you can only find extra firm tofu, you will have to add more lemon juice and milk.
After it is all blended and smooth add the spinach. Side note: I wash my veggies with a bowl of water and add a couple or more tablespoons of baking soda. I let the veggies sit in the water for about fifteen minutes and carefully remove them so that the yucky stuff stays at the bottom. For the spinach I just laid it out on a kitchen towel to dry before I cut it up.

Noodles
Cook the noodles in small batches to prevent them from breaking. But if they do don't worry about it. I cook the noodles last because if they sit too long they tend to stick together. Even if you add oil to the pot of water. If your water is boiling nicely it should only take from 8-12 minutes for them to cook.
Layer,layer,layer, Repeat
Now for the fun part!
You are going to layer the ingredients in the following order till it is all gone!
olive oil
sauce
noodles
"cheese"
repeat
Bake at 350 degrees till it is all heated through. Probably about thirty minutes. I top mine with equal parts bread crumbs and parmigiana cheese before baking.Enjoy!
