Vegetarian Korean BBQ Portobello Mushroom Burger

This recipe Makes 2 burgers.

This is a recipe that my family and I use for Korean portobello mushroom burgers these are very delicious and it is fairly easy to make it takes 45 minutes - 1 hour 20 minutes.

Supplies

-For Marinade

  1. 1/2 cup of water
  2. 1/8 cup light molasses
  3. 1/8 cup pure maple syrup
  4. 1/8 cup tomato paste
  5. 1/8 cup soy sauce
  6. 1/8 cup red wine vinegar
  7. 1 table spoon liquid smoke
  8. 1 teaspoon toasted sesame oil
  9. 1 teaspoon sriracha
  10. 1/2 teaspoon onion powder
  11. 2cloves garlic, smashed
  12. average-size portobello mushroom caps, stem removed
  13. olive oil (spray) for broiler not marinade

-For serving

  1. 4 large white hamburger buns
  2. mayo
  3. 1/4 cup kimchi

Prepare the Marinade

clean the mushrooms but do not take of the gills. combine all the ingredients into a shallow bowl or pan with room to hold the mushroom caps in a single layer.

let the mushrooms marinate gill side up for 15 minutes to 1 hour. make sure each mushroom is covered in marinade

Broiling Directions

preheat the broiler to high, spray a rimmed baking sheet with olive oil. Put the oven rack 6 inches from the heat, place each mushroom gill side up on a baking sheet and broil for 5 minutes on each side.

Assemble

To assemble your burger spread each bun with a little bit of mayo, place 1 mushroom on the bun. Then top it of with some kimchi, place the top bun on and your burger is ready to eat.
