Vegetable Masala Sandwich

What is Pav Bhaji?

According to the internet, Pav bhaji is a Maharashtrian fast food spicy dish that originated in Mumbai cuisine. It is native to Mumbai and has now become popular in most metropolitan areas in India, especially in those of central and western Indian states such as Gujarat and Karnataka. Pav originates from the Portuguese Pao, which means bread. Bhaji in Marathi means vegetable dish. Pav bhaji consists of bhaji garnished with coriander, chopped onion, and a dash of lemon and lightly toasted pav. The pav is usually buttered on all sides.

To make vegetable masala sandwich or pav bhaji sandwich , I have made vegetable masala (Bhaji) using the traditional bhaji ingredients .

I have modified the traditional Pav Bhaji to a yummy delicious sandwich.

Supplies

  • Ingredients for vegetable masala (Bhaji):
  • Potatoes (x2)
  • Carrots (x2)
  • Capsicum (x1 cut into 4 equal parts)
  • Green Peas (half cup)
  • Cauliflower (1 cup)
  • Salt (as per your taste)
  • Cooking Oil (3 tbsp)
  • Onion (x4 sliced)
  • Ginger garlic paste ( Half tbsp)
  • Red chilli Powder (half tbsp)
  • Tomatoes (x2 chopped)
  • Pav Bhaji masala or vegetable masala (2 and half tbsp)
  • Cumin Powder (1 tbsp)
  • Coriander Powder (1 tbsp)
  • Butter (4 tbsp)
  • Coriander leaves (for garnishing)

Ingredients for making sandwich:

  • Pav or any kind of buns or bread
  • Chopped Onion (x1)
  • Lemon juice (1 tbsp)
  • Sandwich cheese

Let's Begin With VEGETABLES...

Firstly, in a pressure cooker add water until its half the pressure cooker (depends on your pressure cooker)

Now, peel the potatoes and carrots and slice them into 4 equal parts and put it into the pressure cooker.

Next, add capsicum, green peas and cauliflower into the pressure cooker.

Now add half teaspoon of salt on the veggies.

Now cover the pressure cooker with the lid and pressure cook for 3 whistles on medium heat.

Lets Sauté Some ONIONS..

Now take a saucepan and then, on low heat, add 3 tablespoon of oil.

Then, add sliced onions into the saucepan and add salt (half tablespoon or as per your taste), ginger garlic paste and red chilli powder (you can add more if you want it more spicy).

Now , saute the onions with a wooden spatula for about 3 minutes and then cover the saucepan with the lid for 2 minutes.

Next, add chopped tomatoes in the saucepan and saute till they turn soft.

Now, add pav bhaji masala ( or vegetable masala) into it.

Adding Masala and Mashing the VEGETABLES...

Now, add the vegetable slurry (that we made earlier in the pressure cooker) into the saucepan and mix it with wooden spatula.

Next, add coriander powder and cumin powder into the Bhaji (vegetable masala) and mix it .

Now, mash the vegetables well and then add 2 tbsp (or more) butter into the Bhaji.

Also, don't forget to add on some coriander leaves.

Toasting and Making SANDWICH...

Now take 1 pav (bread) and slice it in half.

Next, take a pan on a medium heat and add butter to the pan and toast both the sides.

Once the pav has been toasted, start adding the bhaji (vegetable masala), chopped onions, lemon juice, sandwich cheese on the pav (bread) and put it in the microwave for about 10 seconds for the cheese to melt.
