Vegetable Fried Rice (with Egg)

This is my favorite "go to" rice recipes. very tasty and not that difficult to make.

You will need:

Three cups of brown rice. Cook it normally and let stand covered in the refrigerator over night.

1/2 onion

One clove garlic

1 Tbsp. oil, I use sesame oil.

One cup of mixed frozen vegetables

3 tablespoons of soy sauce, I use low sodium tamari.

Two cups of Napa Cabbage

One egg

A 12 inch fry pan with lid

A I quart sauce pan

Prep Work

Cook the vegetables for 6 minutes, drain and set aside

Chop the Napa cabbage and set aside.

Mince the onion and garlic. Keep separate

Let's Cook It

Heat the skillet on medium flame.

Add 1 tbsp. oil to pan

Add chopped onion to pan and sauté for about 5 minutes being careful not to let it cook too fast.

Add chopped Napa Cabbage and vegetables. Continue sautéing until the cabbage starts to wilt. Then add the garlic, mix everything around. Only cook the garlic for about 30 seconds.

Scrape the mixture to the sides of the pan in a ring and crack the egg into the center.

Scramble the egg in the center breaking it up in pieces.

Mix the egg into the vegetable mixture

Add the rice and pour the soy sauce over the rice and vegetables.

Mix well until everything is mixed.

Put the lid on the pan and turn the fire down to low to let the flavors mingle.

I don't use salt with this recipe but now would be a good time to check the taste and add more soy if needed.

Serve immediately
