Vegan Slider
Hey Peeps, this is my first food instructables. I was inspired by hunger and a complete lack of necessary ingredients to uplift the taste of it. I will provide with a complete list of items needed to make the sliders of our dreams, I will split the list in two parts i.e, what I had available and what all can be added on top to make it even better. This also makes a good hot snackable item during rainy days.
List of Items Required
Cooking apparatus
One pot with lid, for boiling purpose.
One frying pan and a long handle spatula thingy.
Items I had at hands
two large sized potatoes
1/2 finely chopped red onion, gives a better and stronger taste
1 tbs Cumin seeds
3/4 tbs mustard seeds
1 tbs Coriander powder (You can use fresh ones too, definitely a better option)
1.3 tbs Garlic paste
chili flakes per taste
salt per taste
finely sliced tomatoes
bread or buns
cooking oil, as needed
1 tbs Turmeric powder
Add on items
cheese
lettuce
pickles
desired sauce
Boil the Potatoes
First of all fill the pot with water add a few pinches of salt to help with the boiling process. Take the two potatoes, nicely wash them under running water with skin and then place them inside the pot. Place the pot w/ lid on stove. Set the stove's level at a little above medium and thoroughly boil the potatoes. Once they are evenly boiled, remove the hot water from the pot and fill it with cold water for approx 3/4 minutes. Remove the potatoes, peel them and place them in a mixing bowl.
Chop the Onions
this is a self explanatory step. Chop them nice and as evenly as possible.
Onion Prep
Take a frying pan and add some cooking oil, over medium hotness level of the stove. Also don't forget to turn off the stove which you used for boiling the potatoes ;).
Heat the oil up and then add the seeds, and let them sit until you hear them pop. At this stage, bring the onions and add them to the popping seeds. When you add the onions make sure you are turning them and mixing the seeds with it. After you are done mixing the onions add garlic paste. Saute this mixture until the onions start to loose the water and become sort of translucent, make sure to not cook them thoroughly; you want to retain that little crunch of it while eating it.
Making the Patty Mix
Now we will focus on making the real deal, the patty to be deep fried, fried, or baked (healthier).
First of all, we smash the boiled potatoes and add turmeric powder with chili flakes. At this stage thoroughly mix the spices and try to not have big lumps of potatoes. Avoiding as many big lumps as probable will help make the patty making process easier. After it has been mixed add a little bit of cooking oil and re-smash the mixture.
Take the fried onions prepared earlier, they should have cooled up enough by now. Add the onions to the mix, then add salt to taste. How is the time to get real dirty with hand, mix all of it to best of your ability. At this stage add a little bit of crushed black pepper for the zing, then repeat the mixing process. The base for the patty is ready to be cooked.
Cooking Time
Take a strip of foil and lightly oil it, this will prevent the patties from sticking to it.
At first I made big patties and tried to fry it, the result was a disaster. I highly recommend to keep the patty size small, like the same size as the bottom of a standard coffee cup from McDonald's, Startbucks...you get the point. Add oil to the pan and fry the patties until they turn golden brown. Alternatively you can heat them up in the oven as well, I'm not sure how long this would take as I haven't tried it yet. But I do intended to try the baking process with the leftover later tonight. If you are using oil, you can use kitchen towel to absorb the excess oil from frying it.
Final Step
Wipe the pan clean and toast the bread on the pan. Since I had made small patties, cutting down the bread in fours made good sense.
Now with we are ready to put the sliders together.
