Vegan Salsa Con Queso

So I really had the urge for making salsa con queso one night, this is one of my FAVORITE food items to eat, my mom used to make it for me on special occassions with the the ground beef in it. Of course I am vegan so here is my original veganized recipe..as follows:

So I really had the urge for making salsa con queso one night, this is one of my FAVORITE food items to eat, my mom used to make it for me on special occassions with the the ground beef in it. Of course I am vegan so here is my original veganized recipe..as follows:

Ingredients: Salsa (any brand) Daiya Jalapeno Havarti Style Cheese - One Block Braggs Nutritional Yeast -this isnt REQ'D but it helps overall taste Raw Whole Cashews - I got these on SALE =) ! Unsweetened Cashew Milk - This was 2$ at Target Meat Crumbles/Diced Portobello Mushrooms (optional, don't purchase the brand i used i found out it had egg whites in it after purchasing =(.. #newlyveganproblems) **if using meat crumbles purchase a taco seasoning the brand doesn't matter mine was .50cents at Target** Instructions: **[to make this nut free sub a cooked (mild flavored potatoe ex: yukon gold) and rice milk]** crumble the cheese ( this will help it blend better) 1/2 cup of cashews 1/16 cup of braggs nutritional yeast 1/2 cup of Cashew Milk blend all of this until thick and creamy If using meat prepare your meat crumbles, the best way to get the most out of the seasoning packet is to add some oil, the oil helps the seasoning disperse throught all of the meat ( I would not use water because water in meat substitutes tend to make it mushy and sometimes it breaks down the composition/texture of the product), if using mushrooms cook them down fully until they are tender. Remove cheese mixture from the blender and pour into the pot with "meat crumbles" , (if you aren't using meat this same method applies). Heat the mixture through and add the other 1/2 cup of cashew milk and 1/2 cup of salsa, stir until heated and creamy. If you want to keep this in a crockpot for a party/gathering I would add maybe a cup more to make sure it doesn't dry out. Thats pretty much it I hoped you enjoyed this recipe !
