Vegan Chicken Curry

Hi all !!

Looking for a vegetarian ingredient dish that looks like Non-Vegetarian, here is such type of recipe where it has similar taste like chicken curry but without chicken.

Difficulty level: Easy

Supplies

List of ingredients

1) Soya chunks - 1 cup

2) Tomato - 1/2 kg or Tomato Puree - 1 1/2 cup

3) Ginger & Garlic paste - 1 tsp

4) Coriander Powder - 1 tsp

5) Big red onion - 1 no

6) Chilli powder - 1 tsp

For Marination

1) Coriander Powder - 1 tsp

2) Garam Masala - 1 tsp

3) Jeera Masala - 1/2 tsp

4) Thick curd or Yogurt - 1/4 cup

5) Salt - 1/2 tsp

6) Turmeric power - 1 tsp

7) Chilli powder - 1 tsp

8) Ginger Garlic paste - 1 tsp

For Tempering

1) Bay leaves - 2 nos

2) Cinnamon stick - 1 no

3) Cardamom seeds - 4 nos

4) Cloves - 4 nos

5) Fennel or Jeera - 1 tsp

Puff the Chunk

Generally soya chunks are looks like and feel like (almost) meat. You can also just use soaked soya chunks which will be suitable but in order to incorporating salt into it, Add the soya chunks in water with salt, boil it for 7 mins or until water becomes frothy.

Squeeze and Drain

Filter it from boiling water and add it to normal water. Squeeze it to remove excess water as it will make our dish soggy or else.

Marination

Initially add curd , followed by spices mentioned under marination, mix well. Now add Soya chunks for coating it and leave it for 30 mins

Chop Chop

slice the onions vertically and thin. Cut the tomato and blend to obtain fine puree

Tempering

Add 2 tsp of gingelly oil or ground nut oil or olive oil or even coconut oil to nice aroma, add the tempering item at low flame and once the smell comes out add onion and fry until golden brown now add ginger garlic paste, coriander powder, chilli powder, salt.

Chunk and Puree

Now add the marinated chunks and fry until the water evaporates from the curd and masala absorption. Finally add tomato puree and check for salt requirement.

Simmer

Thanks to my Red tomatoes, gravy came out really vibrant red without adding food coloring, looking like authentic chicken dish. Now only left is tomato puree to boil, so close the lid and let it boil for 15 mins. Meanwhile prepare a dish to accommodate with this

Roti

Wheat flour - 1 cup

Water - 1 cup

salt - 1/2 tsp

Ghee or clarified butter - 1 tsp

Take wheat flour, mix with water add salt and ghee, convert to dough. Adjust water accordingly to the need, dough should be soft and squishy

Make small balls from it, add flour and roll it for it to be non - sticky. Ideal shape of Roti is round , but to be honest i can't roll it like that in round shape, it does take lot of patience as the dough will rotate while you apply pressure on you roller.

so my shortcut is to cut it out using round object, in this case round bowl... Your round roti is ready !!
