Vegan Breakfast Scramble

Ever crave a warm, filling breakfast that is also healthy, quick to make and plant strong? Do you want to impress your friends (or your Mom) that you can cook a healthy, tasty breakfast with ease- all by yourself? ("Look at me! I'm a self sufficient Adult!")

Well, check out my Vegan Breakfast Scramble! It is so full of happiness and belly-loving goodness, it would make your Momma proud and cholesterol level drop!

Ingredients

Here we used:

Organic Sprouted Firm Tofu (1/ Brand: Wildwood)

Chopped Organic Sweet Potato (1) (Golden Russet Potatoes also works)

Organic Cherry Tomatoes

Organic "Super" Greens: Baby greens, red & green swiss chard, tat sol, arugula & spinach

Daiya Mozzarella Cheese

Chilli Powder

Garlic Salt

Organic Hemp Oil

Organic Coconut Oil

Liquid Aminos

Prep

* Pan fry sweet potatoes on a skillet with coconut oil (1 tbsp)

* Crumble Tofu into a bowl and add in seasonings. (We used Hemp Oil (1 tbsp), Liquid Aminos (1 tbsp -you can also use low sodium soy sauce), Garlic Salt & Chili Powder for a nice kick)

Add in the Goodies!

Once potatoes are brown and crispy, add in the rest of the goodies!

* Toss in the seasoned Tofu & sliced cherry tomatoes (We also threw in some chopped vegan chipotle sausage to make it a bit heartier and SPICIER!)

* After about 5-7 mins of mixing, add in the greens.

Finishing Touches

Once greens are mixed in well, place a lid over the skillet to steam up the veggies.

After 5-6 mins, stir then sprinkle in some yummy Daiya Vegan cheese to top it off.

And..VOILA!

Now you have your warm, gooey, colorful, healthy breakfast scramble!

Bonus Tip: If you like extra spicy food like myself (obviously), sprinkle in some chili flakes and douse, I mean, add a few drops of hot sauce (Cholula & Tapatio) and you'll be having a fiesta in your mouth!

by wrapping that sucker in a Chile & Onion Flour Tortilla Wrap (from Trader Joe's).
