Eggless Banana Bread - If you're looking for a quick and easy recipe to make, this is the one! This banana bread lives up to every banana bread expectation there is out there, and it is eggless. Even if you do eat eggs, still try this recipe because it is irresistibly soft and moist, with a great flavor! It's a great option for people who are vegan/vegetarian.

Here's what you'll need!

Ingredients -

Vegan Banana Bread

Servings : 1 loaf

- 2-3 large bananas(make sure they are ripe)

- 180g (1 ½ cup) all-purpose flour

- 1 ½ tsp baking powder

- 1/4 tsp baking soda

- ½ tsp salt

- 150g (3/4 cup) granulated sugar

- 75g (1/3 cup) vegetable oil

- 60g (1/4 cup) plain vegan yogurt of choice

- 1 ½ tsp vanilla extract

- 80ml (1/3 cup) vegan milk of choice

- ½ cup raisins*(optional)

- ½ cup vegan dark chocolate, chopped into chunks*(optional)

- ⅓ cup pecans*(optional)

- Almond slice on the surface*(optional)

PLEASE NOTE: Although I am also providing cup measurements, I encourage you to use a scale if you can and use the grams measurement. Doing this will provide the bread with more flavor and a better finish.

Preparation : Preheat oven to 355°F/180°C.

1. In a small bowl, mash 2-3 large ripened bananas until smooth. Make sure there are no lumps or chunks, as this will cause the bread to become green in some areas.(If you want a finely mashed banana, then mash the bananas in a food processor to make it easier). Set aside.

2. Sift the dry ingredients in a medium bowl and set aside (flour, baking powder, baking soda, and salt).

3. In a large bowl, whisk the sugar, oil, yogurt, and vanilla. Then fold in the mashed bananas.

4. Slowly fold in ⅓ of the dry ingredients until just combined. Then add ⅓ of the milk, and mix it in. Repeat until all the ingredients are used.

5. At this point, you can add in your additives such as chocolate, pecans, raisins, etc. This is optional.

6. Bake in a preheated oven at 180°C/355°F for about 50-55 min or until the skewer inserted comes out clean.

7. Cool on a rack for 15 min before cutting it(Cool overnight for a better flavor).

8. The cake is ready to serve. Enjoy!
