Vanilla Fruit Popsicles

For this project you will need
• bowls
• saucepans
• whipping cream
• milk
• sugar
• whisk & spatula
• chopped fruit ( 3 oz or more )
• egg yolks
• lemon juice
• cornstarch

Milk Base

Mix 1/2 cup of sugar, 1/2 cup of milk, and 1 tablespoon of cornstarch in a saucepan on medium heat until boiling.
Egg Mixture


While the milk base boils ( don’t forget to stir ) add 3 egg yolks and 2 teaspoons of vanilla extract. Whisk until combined. Then while whisking pour the milk base into the boil.
The Custard


Poor the combined milk base and egg mixture back into the saucepan. Set on medium high and stir, then rest and let boil till a thick base forms. While it rests in a bowl whip 1 cup of whipping cream until soft peaks.
Combining

Now add your custard and your whipping cream together. Mix until completely combined.
Fruit Compote


Let the base from step 4 sit in the fridge until ready to fill molds. In a separate sauce pan take your chopped fruit ( doesn’t matter what kind. I used blueberries & peaches ) 1 teaspoon of lemon juice and 1 teaspoon of sugar, and place on medium heat till fruit break down. ( keep your compotes separate !! )
Combining Part 2

Take 2 bowls ( depending on how many compotes made ) and seperate the base you put in the fridge into the bowls evenly. Then add your fruit compote(s) and stir them in.
Pouring Into the Molds

Now that your compote has been mixed in, pour into your popsicle molds. Then place in the freezer over night ( for best results ) or until completely frozen. And now you are done. Enjoy!!
