In this instructable, I will show you how to make vanilla cupcakes. Cupcakes are one of those comfort treats, reminds me of my childhood, eating cupcakes with a colored frosting, sticking out my tongue and laughing in the mirror at the different color. Good memories. This recipe for vanilla cupcakes is very easy to make, if I can make them, you can make them, let's get baking!

Ingredients\Tools

Ingredients:

  • 3/4 cup unsalted butter (softened) (170g)
  • 1 3/4 cup of white granulated sugar (337g)
  • 2 large eggs
  • 3 tsp. of vanilla extract (15mL)
  • 1/2 tsp. of salt (2.5g)
  • 2 1/2 tsp. of baking powder (12g)
  • 2 1/2 cups of all purpose or cake flour (320g)
  • 1 1/4 cups of milk (I like to use whole milk) (375mL)

Frosting:

  • 1 lb. of powdered sugar (confectioners) (453g)
  • 1/4 cup of milk or half and half (63mL)
  • 1 tsp. of vanilla extract (5mL)

Cream Butter and Sugar

First let's preheat the oven to 350 Degrees F. (176 C) Now in a large bowl let's cream together our softened butter and our white granulated sugar. Make sure to scrape the sides of the bowl with a spatula as needed.

Egg It Up

Now let's add our eggs, vanilla extract, salt, and baking powder, and cream those together with the butter and sugar. Again, scraping the sides as needed.

Flour and Milk

Finally let's slowly add in our flour and milk, I do it about a third of it at a time, mix, scrape, etc. Until all incorporated.

Fill Them Up

Now let's fill up or paper cups. You can use a piping bag, or a spoon, just make sure to get about the same amount in each one, roughly two thirds of the way full. Bake them again at 350 F (176 C) for 15 to 20 minutes, until a toothpick comes out clean when you poke it. When they are done, you will probably see a light golden brown edge around them. Let them cool for a few minutes in the pan, before transferring them to a wire rack to cool completely. We don't want them warm when frosting them.

Now let's make a basic frosting. You can use whatever frosting that you like. These cupcakes are really good even without the frosting. Add our milk, and vanilla extract to a large bowl and slowly incorporate the powdered sugar until you get the consistency that you like. Add some food coloring if you wish.

Decorate Them

Now let's put that frosting in a plastic bag or piping bag and decorate out cupcakes. You can use sprinkles, candies, fondant, whatever you want to use to decorate them. Now you are done, time to serve them up, eat them all, give them away, whatever you want to do with them. :) Enjoy!
