Vanilla Chai Pear Pie

A delicious pie that combines refreshing pears with the warmth of chai spice...sure to make your mouth water

Greek Yogurt Crust Instructions

Ingredients
1 ¼ cups all-purpose flour
1 teaspoon sugar
½ teaspoon salt
½ cup cold butter, cut into small pieces
1 egg yolk
4-5 tablespoons* non-fat Greek yogurt
**Highly suggested that recipe is doubled for larger pies**
In the bowl of a mixer (with paddle attachment) add flour, sugar, and salt. Turn the mixer on low just until combined (a few seconds)Add the butter. Turn the mixer on low speed, until the mixture has coarse crumbs of butter throughout, about 45 seconds.

Mix Yogurt and Egg Yolk



In a small bowl, mix together the egg yolk and the Greek yogurt until combined and smooth. Add the mixture to the mixer bowl. Mix on low speed again, for about 15 seconds (being careful not to over mix at this stage), or until the mixture is moist and shaggy and forms into a ball when squeezed with hands.
Shaping and Prepping the Dough

Shape the mixture into a ball gingerly with your hands and turn it out onto a floured work surface. Shape the dough into a round disc, and refrigerate the dough for a minimum 30 minutes before baking.
The Filling



Ingredients:
5-6 large green pears, peeled and thinly sliced
3 tsp. ground cinnamon
1-2 tbsp. chai spice (may be used from chai tea bags, chai latte spice powder, or other form)
1 tbsp. vanilla extract
1/2 cup of sugar
1/4 cup all purpose flour
1 tbsp. cold butter cut into small pieces
Preheat oven to 350 degrees F
Toss all ingredients in a large bowl until ingredients are distributed evenly among the pear slices

1/2 cup of sugar
1/4 cup all purpose flour
1 tbsp. cold butter cut into small pieces
Preheat oven to 350 degrees F
Toss all ingredients in a large bowl until ingredients are distributed evenly among the pear slices
Rolling Out Pie Crust and Adding Filling


Split your pie crust into two equal portions. Set aside one half and roll out the other on a floured surface until it is about a 1/4 inch thick and 1in larger than a 9" pie pan all the way around. Gently place into pie pan.

Adding the Top

Take the second half of the pie crust and roll out into a circle 1/4 inch in thickness. Be sure it is about an inch larger than the top of your pie pan all the way around. Place pie crust on top of the pie and crimp the edges. Carefully use a sharp knife to cut out three tear dropped shape holes in the center and dust with cinnamon if desired.
Bake and Enjoy!

Bake your pie at 350 degrees F for about 40 minutes. The top should be golden brown. Enjoy your vanilla chai pear pie once it has cooled!
