VEGAN Ceviche!
Because we all love some good, refreshing ceviche on a warm day. However, not all of us eat fish or imitation meats. So here's a delicious recipe to get that ceviche craving out of the way! The meat-eaters shouldn't have ALL the fun. Here's a little something for those of us who don't consume anything with a heartbeat. Hope you enjoy.
Heres what you will need:
1 medium sized Cauliflower
1 cucumber
1 Jalapeno (2 if you like some more kick)
1/4 Large white (or red) onion
2 large tomatoes
2 lemons
2 tablespoons distilled white vinegar
1/2 Bell Pepper (any color you like)
Handful of cilantro
Salt and Pepper to taste

Pretty Cauliflower Gets Chopped!
Take your cauliflower and rough chop it into small pieces.
I usually don't use the stems of the cauliflower because the chunks tend to be harder. But you can definitely use it all!
This step gets a little messy, so its better to do it in quarters. Get it all chopped up and toss it into a large bowl.

Spicy Chops.
Next we will get our peppers and onion into the mix.
If you like a mild amount of kick in your food, definitely make sure to SEED your jalapeno. If you like more flavor, add two. If you are into the spicy stuff, leave the seeds in! Give it a fine chop and toss it in.
Do the same for the bell pepper and onion. The finer you get the ingredients, the better.
Toss it all together.

Add Some Liquid!
Once you have the peppers, onions and cauliflower all mixed in, its time to add some acidity to it all.
Take the juice from two large lemons and throw them in.
Add two tablespoons of distilled white vinegar.
Toss everything together and there should be a little more color coming through.

Cucumbers, Tomato, Cilantro!
Take your cucumbers and dice them into small pieces. I like to leave the skins on for texture and color, but you can remove them if thats what you like.
Tomatoes get finely diced and into the bowl.
Take your cilantro (hopefully from your garden) and give it a fine chop.
All into the bowl and a good toss.
You're almost ready to eat!

A Little Dash of This and That.
Take salt and pepper and sprinkle to taste, give it a final toss and you are done!
Serve on a tostada or with a side of tortilla chips and enjoy.
Oh yeah, don't forget a refreshing beverage, i suggest an ice cold beer. Oh and for some reason, ceviche always tastes better when eaten outdoors.
