Ube Sugar Cookies

Ube (purple yams) add a delicious nutty flavor (similar to pistachio) to sugar cookies. If you don't have fresh ube available, powdered ube is a great alternative!
Supplies
- 2 cups flour
- 1 1/4 cups powdered sugar
- 1/4 teaspoon salt
- 1 teaspoon baking soda
- 1 teaspoon cream of tartar
- 1/4 cup powdered ube
- 1 egg
- 3/4 cup (1-1/2 sticks) room temperature unsalted butter
- 1/2 teaspoon vanilla extract
- 3-4 drops purple food dye
Mix Dry Ingredients

Preheat oven to 375 F. Mix together the flour, sugar, baking soda, cream of tartar, salt, and ube powder until combined. Set aside.
Mix Wet Ingredients

Cream butter. Add egg and vanilla then mix until smooth.
Slowly Add the Dry Ingredients to the Wet.

With the mixer on low, slowly add the dry ingredients to the wet ingredients. Once fully incorporated, add a few drops of purple and continue mixing on low until the desired color is achieved.
Divide the Dough and Chill

Divide the dough in half and cover in plastic wrap. Chill in fridge for two hours.
Roll and Cut Dough

Using powdered sugar, roll out cookie dough to 1/4 inch thick. Cut out desired shape and place on parchment-lined baking sheet.
Bake and Decorate

Bake cookies for about 6-7 minutes, or until bottoms begin to brown. Once cooled, decorate as desired. You can drizzle with white chocolate and topped with chopped pistachios as shown. Enjoy!
