Two Tone Cupcakes!

Everybody loves cupcakes, but these add a little surprise when you take a bite!

You Will Need

Ingredients:
-175g Self Raising flour
-150g Sugar
-150g Butter
-3 Eggs
-1tsp Vanilla essence
-Food colouring
OR your own basic cupcake recipe.

For the icing
-250g Icing Sugar
-150g Butter
-1tsp Vanilla Essence
-2tsp Hot Water
-Food colouring

Equipment:
-3 Bowls (one large, one medium and one small)
-Electric mixer
-Small Glass
-Fork
-Muffin tray and cupcake cases
-Kitchen Scale
-The end of a spoon, a chopstick or a skewer.

Making the Cupcake Mix

Sift flour and sugar into a large bowl. Add the vanilla. In the smallest bowl, soften butter. In the remaining bowl, lightly beat the eggs and add to the mix along with the butter. Mix together with an electric beater for two minutes. Split the mix in two by drawing a line down the middle with a spoon, then transfer one half to your egg bowl. It does not matter if there is still egg in the bowl, just mix it in.

Colour each half with a food colouring of your choice. Red and green are great for the holidays, purple and orange work nicely for halloween. Keep in mind that blue is difficult to produce because it will work against the orange/yellow of the egg in the mixture. Stir in the food colouring with two separate spoons, you don't want to combine them.

If you really wanted to, you could add some other kind of flavouring like an essence or citrus zest. I was thinking about doing a chocolate chilli and lime which would be nice.

Put the cupcake cases in your muffin tin. If it only makes six at a time, don't worry because the mix will be fine if you leave it for the next batch.

Spoon about a tablespoon of one colour into the left side of each case. Add a spoonful of the other colour to the other side. Use your chopstick/spoon end/skewer to swirl them together. You only JUST want to mix them, otherwise opposite colours will blend and you will end up with an odd coloured sludge.

Pop them in the oven at 200 degrees Celsius (390F) for 18 to 20 mins depending on your oven. They should be springy and not quite browned on the top. Use the skewer test if you are unsure.

Icing

Soften the butter in a large bowl. Add the vanilla and icing sugar. Mix for a bit then add 2tsp of hot water. Continue mixing and add a few drops of food colouring. As with the cupcake mix, you can use some kind of flavouring if you wish. Pipe or spread onto your cupcakes and decorate with sprinkles and the like.
