Turkey Soup

I love using leftovers and using them to make new meal. After Thanksgiving I wanted to use the leftover turkey I had in the freezer, so I started researching for turkey soup recipes. I tried a few and this is the recipe I have created from trial and error. I like this recipe because it is easy and I full of flavor. Happy cooking!

Ingredients

  • 2 Tablespoons of olive oil
  • 1 Cup Carrots
  • ½ Yellow Onion (diced)
  • 2 Stocks of Celery (thinly sliced)
  • 2 Cloves of Garlic (minced)
  • 64 oz chicken broth
  • 2 bay leaves
  • 2 ½- 3 cups of turkey breast finely chopped
  • 1 tablespoon of lemon juice
  • ½ teaspoon of oregano
  • ½ teaspoon of thyme
  • 1 teaspoon of black pepper
  • 3-5 leaves from the celery stock (optional)

Optional - Dumplings

  • 1 can of 8 Pillsbury Original Biscuits

Kitchen Supplies

  • One large soup kettle
  • Wooden spoon
  • Knives
  • Cutting board
  • Measuring cups and spoons

Slice and Dice the Vegtables

Make sure to try to keep the same thickness so they cook evenly.

Also if you have freezer room, I recommend freezing the leftover celery. It comes in handy when you only need a little for a recipe but you don't want to buy a whole bag. It cuts down on waste and time!

Add the Olive Oil in the Pot on Medium Heat.

Let the Oil Get Warm and Then Add the Celery, Carrots and Onion. Cook the Veggies for About 8-10 Min or When They Are Softened. Stir Occasionally

4. Add the Minced Garlic and Stir for 1-2 Mins or Until the Garlic Is Golden Brown. Do Not Let the Garlic Burn.

Add the Chicken Stock, Thyme, Oregano, Pepper and Bay Leaves. Bring to a Boil. Let It Boil for 8-10 Mins or Until You Can Cut the Veggies Easily With a Fork

Add the Turkey and Lemon Juice and Let It Boil for 3 Min or Until the Turkey Is Warm.

This is when the leftovers come into play, you can use leftovers or shredded turkey breast.

Remove the Bay Leaves and Add Salt to Tase

A fork works best for me when removing the bay leaves.

And Serve! Always Great With Bread or Saltine Crackers

Optional - Dumplings

  1. Take the roll of Pillsbury biscuits and start ripping pieces off about the size of a quarter and put them into the pot (I use about ¾ of the can)

  2. After your dumplings are in the pot, boil for 5 min.

When storing your soup with dumplings you might have to add water when reheating
