Tuna Salad My Way

I know, ANOTHER recipe form this guy! What can I say, I make more food than anything else! For years I made and ate "normal" tuna salad with mayo type dressing until I ran out of mayo/dressing and needed to make lunch. Searching the frig I saw the Italian dressing..VILOA... a new sandwich! This also works well on crackers, pita chips or even doritos

Tuna Salad is one of those refrigerator velcro type recipes that you can use almost anything in your fridge to make. this time I found a piece of an onion, a lonely pickled jalapeno, a piece of roasted red pepper and some olives. You'll also need some tuna, I like the foil packed tuna but was out so I used the canned type which meant I needed a can opener as well

1st I used the can opener to open the entire top of the tuna can, carrying the can to the sink I could apply pressure to the "lid" and squeeze out the water. I dumped the now almost dry tuna into a storage bowl (why dirty a dish just to wash it?) I chopped/diced the onion, peppers and olives and added them to the bowl, finishing up with a couple of tablespoons of italain dressing and mixing it all up

Put a couple of tablespoons of the mix on your bread, at the last minute I decided to add a slice of cheese, then top with your other slice of bread. Or skip the bread altogether and use crackers or large frito chips or doritos or heck just eat it with a fork !
