A truckers breakfast is usually a big breakfast with eggs, home fries, meat, and a bit of a simple salad. This is a hungry man’s meal fit for a king, and made to last until the next truck stop. So get fishing and catch some pan fry Trout. Pan fry trout are small about the size of a medium frying pan and fun to catch for young and old.

Clean the trout, you can leave the heads on but most people do not like the idea of the fish looking at them.

Slice the potatoes about 1/4 of an inch thick.

Slice the tomatoes about 1/4 of an inch thick.

With the lettuce leaves if you prefer you can tear them into small bits or if you are like me slice the leaves into thin strips.

Home Fries

Since the home fries take the longest to cook start by cooking the home fries first.

Oil and preheat your grill to 350⁰, make sure your grill is hot or every thing will stick to the grill when you try to cook it.

Fry one side of your potato slices and when they are a golden brown flip them over.

When the potato slices are browned on the other side and almost completely cooked move them to one side turning them once in a while as you cook the eggs and trout.

Frying the Eggs and Trout

Since the Eggs and trout cook in the same amount of time add a little butter to the grill put your eggs and trout on the grill.

When the eggs are about half cooked flip the trout, this would be a good time to flip the home fries set to one side if you haven't done so already.

Serve

After flipping the trout your truckers breakfast should be ready to serve in a couple minutes.

Place the lettuce and tomatoes on one side of the plate and the eggs, home fries, and trout in that order on the other side of the plate.

And there you have it a real truckers trout breakfast.
