In this instructable, myself and my friend Kelly will show you how to make a triple berry pie. This berry pie recipe is super easy to make, using blackberries, strawberries, and blueberries. This is the first time I have had someone on the show other then myself. It was a lot of fun! Big thanks to Kelly for coming on the show. Ingredients:

Filling

  • 2 cups of blackberries or raspberries (220g)
  • 1 1/2 cups of blueberries (150g)
  • 1 cup of sliced strawberries (160g)
  • 3 Tbsp. cornstarch (24g)
  • 1/2 cup of white granulated sugar (110g)
  • 1/4 tsp. cinnamon (1g)
  • 1/4 tsp. nutmeg (1g)
  • 1/4 cup of butter (60g)

Pie Crust

  • 3/4 cups butter chilled (180g)
  • 3 cups all-purpose flour (385g)
  • 1 teaspoon salt (5g)
  • 1 tablespoon white granulated sugar (15g)
  • 1/3 cup vegetable shortening chilled (65g)
  • 1/2 cup cold water (may not need it all) (118mL)

Mix Dry Filling Ingredients

First we will preheat the oven to 375 degrees F. (190 C). Now let's prepare the filling. We will mix our dry in ingredients in a large bowl, the sugar, cornstarch, nutmeg, and cinnamon. Use a whisk or fork.

Next we will add in all of our berries. One thing to mention, if you are allergic to strawberries or any of the other berries, you can swap them out with a different berry, like raspberries. Use a big spoon and stir until all the berries are coated.

Now we want to work with our pie crust dough. We pre-made ours, because I already have an instructable showing you how to make pie crust from scratch. You can see it here: https://www.instructables.com/id/Homemade-Apple-Pi...

Add some flour to your table or counter top. Roll out your dough so it is a little over an inch in diameter bigger then your pie pan. Then use your rolling pin, and roll the pie crust back up onto the rolling pin, then unroll it over the pie pan, just an easy trick, to do, instead of picking up the pie dough with your hands. Use your fingers to get the pie crust dough in place.

Now let's fill up our pie pan with the berries. Roll out the other half of the dough, make sure to leave a little more for the top part then you use for the bottom part of the crust. Place the butter pieces on top of the berries.

Now we want to do lattice work. Kelly cut out 10, 1 inch wide strips. She used rulers to help her make them look nicer. Then you place them on the pie, using the over under method. We also punched out lots of little flowers and leaves using the fondant cake decorating tools. On the leaves if you notice where I am pointing, Kelly used a knife to make little veins. Pretty neat huh? :)

Trim, Decorate, Bake

Now we use a knife to trim the edges of the pie. Then start decorating by placing on your flowers and leaves, you can use them to hide any cracks from the lattice work. Once done bake it in the over for 1 hour 30 minutes to 1 hour 45 minutes. I recommend placing the pie on a sheet pan, and then covering the top with aluminum foil. If you don't the top will get brown way to quickly. Then when you have only about 20 minutes left, take the aluminum foil off the top. The pie will be done when it is bubbling in the middle. Now just let the pie cool to room temperature before serving. Enjoy!
