Too Lazy to Cook Dinner
My husband and I frequently work long hours (especially him with grad school, his regular job, and internship). So we frequently do no-cook dinners which involve very little preparation beyond toasting some bread. Last night we did one such meal. These types of meals are super easy to put together AND hit all the major food groups.
Grains
I had picked up a baguette from Trader Joe's last weekend during their 50th anniversary sale. I sliced up the baguette and sprinkled olive oil and garlic salt on half. The other half I left plain. Then I toasted the bread for about 10 minutes at 400. This is the only cooking I did.
We also included these weird tomato basil rice cakes that came in a snack pack.
Fruits & Veggies
Usually we have grapes, apples, pineapple and other fruits and veggies on hand. Last night it was just a couple of apples that I peeled and sliced.
Cheese!
These meals always include cheese! Usually whatever we have in our cheese drawer which typically consists of Rum Runner, a white cheddar, asiago, mozz, brie, and maybe feta.
My husband had picked up some kind of an Irish seaside cheddar from Whole Foods which went AMAZING with the mango jalapeno jam I made a few days ago.
Meat
Often, but not always, these meals also include hard salamis, prosciutto, pepperoni, and other cured meats.
