Tomato Soup From Salsa Hack

Tomato soup is one of my favorite soups. I especially like it a little chunky with some noodles. This salsa hack is a super fast way to make an excellent, fresh tomato soup.

This tomato soup is ideal if you want some fast comfort food or if cooking is not your thing. It requires minimum cooking skill. It's vegan too!

Ingredients

The ingredients for this soup are all store bought and prepared. We are just assembling them into soup:

  • One container of Pico de Gallo salsa of your choice
  • One container of roasted salsa of your choice
  • a little oil (optional)
  • noodles/pasta laying around house (optional)

Since the salsa's are already seasoned, there is no need for additional seasoning. I tend to buy both salsas as mild or if I do want it hot, just one of them will be hot.

Heat a 2-3 quart pan on high with a little oil (optional). Add the fresh salsa and sauté for a few minutes until the liquid from the salsa reduces.

Add the roasted salsa and cook a few more minutes until it comes to a boil.

Add 1-2 quarts of water and bring to boil. I tend to use the salsa containers for this beacause it washes them out and gets them ready for recycling or repurposing. Simmer on medium to low for 10-15 minutes.

Add optional pasta and cook until it's a la dente.

Serve the soup hot. It can be served with bread or tortilla chips.

Dairy lovers can add some cheese or sour cream to the soup as well.
