Tofu Curry

Hello everyone! This is my very first post on instructables and I really hope that you will enjoy and understand everything written on it. I am Spanish ice figure skater currently living and training in Italy. I am not 100% vegan myself, but during last years I have met a lot of vegan sportsmen and women who highly recommended it, and I actually started to decrease my meat intake to just few times per month! Since I saw the vegan food contest, I decided to share few of the recipes and hope you all try and like them!

So here is one of the recipes I enjoy the most, both making and after eating! It´s really easy to make and it´s quite tasty. It has high content of protein coming from the tofu, and by adding some cous cous or rice you also get a great amount of carbs for a good meal.

Total time it will take you:

- Preparing ingredients 10min

- Cooking 30min

From this recipe you will get more or less 4 servings

Ingredients

This is the whole list of ingredients to make the recipe: (the measurements are made in metric system)

  1. 500gr of tofu
  2. 50ml of olive oil
  3. 1 small onion
  4. 2 cloves of garlic
  5. Small piece of fresh ginger root
  6. 30gr of curry powder
  7. Pinch of paprika
  8. A bit of cayenne pepper
  9. Pinch of brown or white sugar
  10. 1 bay leaf
  11. 1 small cinnamon stick
  12. 1/2 lemon juiced
  13. 3 tomatoes
  14. 400ml of coconut milk
  15. Salt to taste

And the kitchen tools we will need:

  1. Plates
  2. Cutting board
  3. Sharp knives
  4. Grater
  5. Mixer
  6. Large sized pan and wooden spoon

To make everything a lot easier we will get all the ingredients cut before going to the stove and start cooking.

First of all we will cut the tofu. The shape i choose is small squares, about 1cm, for me its more comfortable while cooking and also when I eat it. After cutting we put it aside on one plate.

Then we chop the onion and garlic, and we grate the ginger root. We put it all together since we will put it at the same time on the pan.

We take the tomatoes and we cut them in pieces to put them in to the mixer.

Also we put the can of coconut milk into warm water, that way we will make sure that when we open the can, coconut milk will be smooth and will come easy out of the can.

Once we have everything ready, we get in place to start cooking. All the "hard work" is done, now is time to enjoy cooking!!

We will start by cooking a bit the tofu, we sit the pan on a high heat fire and we put a little bit of oil. Once is hot, we throw in the tofu pieces. We must keep stirring, if not we will burn the tofu and it will take a strong burn taste... We will keep on going until the tofu will take this brown colour you can see in the picture. It will take 5 to 10 min to get this colour in the tofu.

We will put it aside once we are done with it.

Making the Curry Paste

We almost done with it! Next step, we lay the onion, garlic and ginger in to a medium-high heat pan with oil. We stir them until they get brown. Ginger will get brown really fast, but if you keep stirring it will all get this brown colour more uniformly.

We slowly start with the spices, we combine the cayenne pepper, paprika, sugar into the pan and we stir. If we see that it gets really dry add some more oil. As last we add the curry powder and we keep stirring a little.

We pour in the tomatoes we mixed before and the lemon juice. We let it cook a little bit. The whole process till now will take about 10min.

We throw in the tofu pieces and we leave it for like 3min, so it will get more taste.

As last step we will pour the coconut milk. You can see in the picture how after leaving the can on warm water for a while it gets smooth liquid.

We low down a little the fire to medium, and we leave it cook for like 10 min, stirring from time to time.

You can decide if you want the curry sauce to be more liquid or not by leaving it on the fire for shorter or longer time. You can see the difference between the pictures when I just poured the coconut milk and when it was done.

Our tofu curry is done! Now we just need to prepare some cous cous or some rice to eat with the curry and we will be ready for the meal!
